Easy Greek Rice

 

 

1 extra-large bag boil-in-bag rice

1 pkg (10 oz.) frozen chopped spinach, cooked and drained

1/2 cup crumbled Feta cheese, divided

1 Tbs fresh lemon juice

1/2 tsp dried oregano

1/4 tsp salt

1/8 tsp garlic powder

Fresh oregano sprigs (optional)

 

 

1.  Cook rice according to package directions, omitting salt and fat.

2.  Combine rice, spinach, Feta cheese, lemon juice, oregano, salt, and garlic powder.  Toss well.

3.  Garnish with crumbled Feta cheese and with fresh oregano sprigs, if desired.

 

 

Yield:  8 servings
